Today's Recipe: 10 Minute Szechuan Chicken
Ingredients:
4 chicken breasts
3 Tbsp almond flour
1 Tbsp vegetable oil
3 cloves minced garlic
5 Tbsp soy sauce
1½ Tbsp white wine vinegar (or rice wine vinegar)
1 tsp Splenda
¼ cup water
6 green onions, chopped (optional)
cayenne pepper to taste
Directions:
Cut chicken into 1" cubes. Lightly toss with almond flour in bag to coat. Heat oil in wok or skillet; stir fry chicken and garlic until chicken is lightly browned. Add soy sauce, vinegar, Splenda and water. Cover and cook three minutes or until chicken is cooked through. Add green onions and cayenne; cook two additional minutes uncovered.
Serving Suggestions:
Serve over rice if desired. Entire recipe contains approximately 14 net carbs (20g carb, 6g fiber, 3.5g sugars).
