Episode 9: Surviving Induction

Today's Recipe: Lemon Chicken with Asparagus
published in the Apr/May 2005 issue of Cooking Pleasures magazine
Ingredients:
1 lb. chicken tenderloin, halved lengthwise
1 ½ Tbsp chopped fresh thyme, divided
2 tsp grated lemon peel, divided
¼ tsp salt
¼ tsp freshly ground pepper
2 Tbsp olive oil
8 oz. thin asparagus
2 Tbsp finely chopped shallots
½ reduced-sodium chicken broth
2 Tbsp lemon juice
Directions:
Sprinkle chicken with ½ Tbsp thyme, 1 tsp lemon peel, salt and pepper.
Heat oil in large skillet over medium-high heat until hot. Add chicken; cook 3 to 5 minutes until golden brown and no longer pink in center. Place on plate; cover with foil.
Add asparagus and shallots to same skillet; cook over medium heat 1 minute or until shallots are softened and asparagus is almost crisp-tender, stirring occasionally. Increase heat to medium-high. Add broth. Bring to a boil; boil 2 to 3 minutes or until slightly reduced. Stir in remaining thyme, lemon peel and lemon juice. Return chicken to skillet; cook 1 minute or until heated through.
