<![CDATA[<p>It's been several months since my last podcast, but I did want to let you all know what's happening &#8212; with me, and with the podcast.</p>

<p>In a nutshell: I secured some freelance/contract gigs, booked an upcoming vacation to Japan, and only this week found out that my last day at my current job will be September 21st. I have yet to secure a new permanent job, but I have four months in which to do so. </p>

<p>I am still watching my carb intake, although anyone on Atkins Induction would scoff at my 100g of net carbs per day. Combined with 150+ daily grams of protein and 25g of fiber, though, it's gotten me back under 200 lbs. </p>

<p>Thanks for staying subscribed, all 200 of you &#8212; I greatly appreciate it. I'm not counting out the possibility of returning to the podcast scene, once I secure a new job and everything is settled back into normalcy... but that could be a while. In the meantime, there are plenty of low-carb resources to fill the gap. After all, I started this podcast because there were no other active low-carb podcasts out there back in October of 2005. And now there are.</p>

<p><b>Today's Recipe #1:</b> <a href="http://answers.yahoo.com/question/index?qid=20061007084706AAGWKwj">Creamy Coconut Shrimp</a> by Mary L</p>

<p>Be sure you buy unsweetened coconut milk (not the kind used for pina coladas), and add enough red pepper flakes to accent the creamy sauce.</p>

<ul><li>2 tablespoons peanut oil</li>
<li>&frac12; small onion, finely chopped</li>
<li>1 tablespoon peeled and grated fresh ginger</li>
<li>3 garlic cloves, pushed through a press</li>
<li>1/8 teaspoon red pepper flakes (or more, to taste)</li>
<li>2 tomatoes, seeded and chopped</li>
<li>2/3 cup unsweetened coconut milk</li>
<li>2 pounds large shrimp, peeled and deveined</li>
<li>Salt and pepper</li>
<li>3 tablespoons chopped fresh basil or cilantro</li></ul>

<p>Heat oil in a large nonstick skillet over medium heat. Cook onion 3 minutes, until softened. Stir in ginger, garlic, and red pepper flakes; cook 1 minute more. Add tomatoes and coconut milk. Cook 10 minutes or until mixture thickens.<br />
Add shrimp to skillet. Cook 3-4 minutes, until cooked through. Add salt and freshly ground black pepper to taste. Sprinkle with cilantro before serving.</p>

<p>Makes four servings with 7g of carbohydrate each.</p>

<li>1 Tbsp. ThickenThin NotStarch Thickener</li>
<li>&frac14; tsp. salt</li></ul>

<p>Combine in small sauce pan. Simmer until sauce thickens.</p>

<p>Total yield contains 13g carbohydrate.</p>]]>

<p><b>Recipe: Pork Rind Meatloaf</b></p>

<p><i>Ingredients:</i><br />
1 lb. ground beef<br />
&frac12; large green pepper, diced (approx. 1/3 cup)<br />
3 oz. shredded cheeze (Colby Jack or other yellow cheese)<br />
2&frac12; oz. pork rinds, crushed<br />
2 Tbsp. dehydrated onion<br />
2 Tbsp. ketchup (Heinz One Carb or other low-sugar tomato ketchup)<br />
2 large eggs<br />
salt, pepper, garlic powder </p>

<p><i>Directions:</i><br />
Combine above ingredients in large bowl. Form into loaf and place in the center of a 9 x 13" glass baking dish. Bake at 350&deg;F for 40 minutes or until done. Entire recipe contains 13 grams of carbohydrates.</p>]]>
